Piccata with Lemon Juice
Ingredients
1/8 teaspoon garlic powder
1 egg
1/4 cup all-purpose flour
1/4 cup butter
3 tablespoons lemon juice
4 skinless, boneless chicken breasts
1/8 teaspoon paprika
1/2 cup boiling water
2 teaspoons chicken bouillon powder
Instructions
Beat the egg in a small bowl with the lemon juice. Put it aside. Get a shallow bowl and combine the garlic powder, flour and paprika. Dip the chicken into the lemon/egg mix then into the flour mix. Melt the butter in a skillet.
Brown the chicken slices in it. Put the bouillon in boiling water and add a couple of tablespoons of lemon juice. Put the liquid into the frying pan. Cover and let it simmer for 20 minutes. Flip the chicken over after 10 minutes.
Piccata with Yogurt
Ingredients
1 tablespoon olive oil
1 teaspoon margarine
4 chicken breast halves (skinned and boned)
8 ounces low fat plain yogurt
1 teaspoon paprika
1/2 cup all-purpose flour
Salt and pepper
1/2 cup lemon juice
1/2 cup water
1 1/2 tablespoons lemon juice
1 cup white vermouth
2 minced cloves garlic
2 tablespoons capers
Instructions
Start this chicken piccata recipe by covering the chicken with yogurt. Store it in the fridge overnight. The next day, rinse the chicken and pat dry it. Get a bowl.
Combine and stir the following: pepper, salt paprika and flour. Add 1 1/2 tablespoons of lemon juice to a skillet along with some margarine and oil. Set the heat to medium.
Dredge the chicken meat in the flour mix and then put it in the frying pan. Cook for 15 minutes, flipping it over at the 7 minute mark. Put the chicken on the plate.
Put the vermouth in the frying pan. Use a wooden spoon to scrape the bits. Add and stir in the water, 1/4 lemon juice, capers and garlic. Cook until the liquid is reduced by 50%. Put the chicken back in the pan. Let it simmer for 3 minutes.
Piccata with White Wine
Ingredients
6 skinless, boneless chicken breasts
1 lightly beaten egg
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
2 lemons (sliced into wedges)
2 tablespoons fresh lemon juice
2 tablespoons vegetable oil
2 tablespoons dry white wine
1/4 teaspoon ground black pepper
1 tablespoon water
1/2 cup dried bread crumbs
1/8 teaspoon garlic powder
1/4 cup all-purpose flour
2 tablespoons of margarine
Instructions
Flatten the chicken using wax paper. Combine the water with eggs. Combine the following: garlic powder, bread crumbs, pepper and salt. Cover it with flour. Dip this into the egg. Add the bread crumbs. Heat the butter in a skillet.
Cook the chicken for 10 minutes. Add the lemon and wine in the skillet. Top with the parsley.
